Holle A2 organic baby milk products with A2 milk from organic farming contain a selected mix of whey protein and casein.  A2 milk is sourced from organic farming and specially selected cows which produce only A beta-casein protein.  Today’s standard cows’ milk contains two main types of beta-casein proteins. Originally all cows were A2 cows. Over time mutation resulted in the milk given by the first milk cows containing A1 beta-casein.  Milk contains a variety of milk proteins. They include the casein and whey protein groups. The structure of the beta-caseins in A1 and A2 milk only varies in one place and is caused by the presence of different amino acids. This difference is crucial because, unlike A1 milk, no BCM7 (beta-casomorphin-7) is produced when A2 milk is digested. BCM7 is an end product of protein breakdown and is believed to have a variety of non-beneficial effects.
